1/8 cup butter, softened
1/4 cup white sugar
1 teaspoon vanilla extract
1 egg
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon salt
1 1/2 cups miniature marshmallows
1 cup brown sugar
1 cup raisins
1 teaspoon dried cornstarch
1 1/2 cups flaked coconut
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, white sugar, vanilla, egg, almond extract and vanilla until smooth. Beat in the marshmallows, 1 cup brown sugar, raisins and cornstarch and mix until well blended. Roll dough into 1 inch balls and place on unprepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.
