1 cup light brown sugar
1 cup lemon juice
1 cup lemon zest
1 teaspoon apple cider vinegar
1 3/4 cups chopped peaches
1 cup sliced bananas
1/2 cup butter, melted
1 cup sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round cake pans.
In a medium bowl, mix together brown sugar, lemon juice, lemon zest and apple cider until well blended. Stir peach mixture and lemon zest into peach mixture. Pour batter into prepared pans.
Bake in the preheated oven for 75 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pan. Reserve 1 cup of peach filling for garnish. Garnish with peaches and bananas. Sprinkle evenly over peach top.
