2 cups white sugar
6 eggs
1 teaspoon salt
1 teaspoon vanilla extract
1 cup butter, room temperature
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons baking soda
1 cup milk
1 teaspoon white sugar for decoration
1 teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, beat 2 cups sugar and eggs. Stir in salt, vanilla, melted butter, flour, baking powder, baking soda and milk. Gradually mix in the flour mixture, continuing to beat until smooth. Fold in the sugar and eggs. Spoon batter into prepared paper liners.
Bake in preheated oven for 20 to 21 minutes, until toothpick inserted in center comes out clean. Reduce heat to 350 degrees F (175 degrees C) and continue baking for an additional 20 minutes. Cool on a wire rack, and refrigerate overnight.
Meanwhile, prepare muffin decorations for the center of oven by filling muffin liners with the leftover batter. Place a layer of muffin decorations on each muffin. Tuck edges of muffins in cup. Place second layer of muffin decorations on top of the first. Top with cup and ribbon. Garnish muffins with vanilla extract.
