Red Potato Salad Recipe

Ingredients

1 cup butter

1 cup cooked, cubed, red potatoes

1 (10 ounce) package frozen mixed vegetables, thawed

1/2 cup sliced celery

1 (16 ounce) can green beans, drained

1/2 cup diced carrots

1 teaspoon dried basil

1/2 teaspoon dried parsley

1 cup chopped onion

1/8 teaspoon salt

Directions

Preheat oven to 350 degrees F (175 degrees C).

Cut the potatoes into cubes, place cubes in a large bowl. Mix together the potatoes, vegetables, celery, green beans and carrots.

Mix the mixed vegetables, celery and green beans; pour over the potatoes and toss until coated. Sprinkle with salt.

Bake at 350 degrees F (175 degrees C) for 40 minutes, or until potatoes are tender.
