4 cups butterflied corn
1 cup packed light brown sugar
2 tablespoons Caramel flavoring, e.g. Punch
1 teaspoon vanilla extract
1 cup chopped pecans
4 cups white corn muffin mix
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) muffin cups or line with paper muffin liners.
Place butterflied corn in a large bowl. Stir in brown sugar. Mix with Caramel flavoring, vanilla, pecans and corn muffin mix. Mix until smooth.
Spread corn muffins in prepared muffin cups. Bake in preheated oven for 10 minutes. Serve warm.
