1/2 cup shortening
1 cup milk
1 3/4 cups white sugar
1 cup dark rum
1 cup milk chocolate chips
1/4 cup chopped pecans
1 (3 ounce) package instant chocolate pudding mix
1 (1 ounce) envelope instant chocolate pudding mix
2 1/2 cups confectioners' sugar
1/2 cup butter and vanilla extract
1/4 cup lemon juice
In a medium bowl, whip shortening until peaks form. Stir in milk and cream sugar until well blended. Fold in rum and chocolate chips. Place on top of cooled glass serving dishes.
Pour pudding mix into 8 tablespoons of the shortening and whip until stiff peaks form. Fill glasses with apricot preserves. Spoon chocolate syrup over top. Garnish with pecans and pecans.
Pour instant pudding mix into 1/2 cup of remaining shortening, mixing until well blended. Pour over pudding and spread evenly. Garnish with lemon juice. Serve hot.
