4 egg whites
1/2 cup white sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1/4 teaspoon lemon peel
1/4 teaspoon vanilla extract
3 cups evaporated milk
In a large bowl, whip egg whites until they reach soft peaks. Gradually add sugar and salt; continue to whip until whites form stiff peaks. Fold in lemon juice, lemon peel and vanilla. Spread jelly onto waxed paper.
