1 (3 ounce) package lemon flavored Jell-O mix
1 (3 ounce) package unflavored gelatin
1 cup chopped peaches - juice reserved
1 cup frozen peach slices
1 cup cooked and crushed sweetened dried fruit
In a medium bowl combine gelatin and peaches. In a separate bowl combine peach slices and dried fruit. Mix well. Pour mixture onto prepared Eclair-shaped cake.
Cover and bake in preheated oven for 1 hour.
