1/2 cup olive oil
2 tablespoons freshly grated carrot
1/2 cup finely chopped onion
1/2 cup coarsely chopped celery
1/2 cup finely chopped green bell pepper
1 (10.75 ounce) can condensed cream of mushroom soup
1 teaspoon paprika
1/4 teaspoon salt
2 teaspoons paprika
1 cup shredded mozzarella cheese
In a medium saucepan, heat olive oil over medium heat. Remove from heat and stir in carrot, onion, celery and bell pepper. Stir constantly, whisking constantly. Bring to a boil, stirring constantly, and reduce heat to medium low. Cook for 5 minutes. Stir in soup, paprika, salt, paprika and mozzarella cheese. Continue stirring until all ingredients are combined.
