2 tablespoons vegetable oil
1 (13 ounce) can stewed tomatoes with green chile peppers, drained
1/3 cup water
1 (20 ounce) can whole peeled and diced tomatoes
2 tablespoons lime juice
1 1/2 cups brown sugar
1 cup dried basil
1/2 cup chopped fresh parsley
3 cloves garlic, minced
1 tablespoon olive oil
1/8 teaspoon salt
3 tablespoons dry pasta sauce
Heat oil in a medium saucepan over medium heat. Stir in tomatoes and green chiles. Cover, and simmer until tender. Stir in water, tomatoes, chopped chiles, tomatoes, lime juice, brown sugar, basil, and parsley. Bring to a boil, then reduce heat and simmer 15 minutes more.
Stir sauce into tomato mixture, and boil about 30 minutes more. Serve with spaghetti and tomato spaghetti sauce, or spoon tomato mixture on top of spaghetti and tomato sauce.
