Spinach Morklug Recipe

Ingredients

3 1/2 cups fresh spinach

1/2 cup olive oil, divided

4 red bell peppers

4 onions, thinly sliced

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup shredded mozzarella cheese sticks

Directions

Heat oil in a large skillet over medium heat. Add peppers, onions and turmeric; saute for 3 minutes.

In a small bowl, combine olive oil with 1 cup ricotta cheese. Spread mixture over peppers, onions, and spices; brush over all.

Add tomatoes and oregano to skillet. Saute in 1 cup olive oil for 3 to 5 minutes, or until tomatoes are cool.

Stir in spinach, olive oil, parsley, mozzarella cheese, mozzarella cheese sticks, tomato juice, onion salt, garlic, tomato paste, tomato paste, a dash of salt or to taste. Let simmer stirring occasionally until spinach is wilted.
