8 eggs
3 (1 ounce) packages white peach flavored Jell-O mix
1 cup hot water
3 egg whites
1/2 cup white sugar
2/3 cup cider vinegar
1 teaspoon vanilla extract
1/3 cup popcorn seeds
1/3 cup sliced pecans
In a medium bowl, mix eggs, peach flavored gelatin and hot water. Pour mixture into a large bowl and sprinkle with sugar, vinegar and vanilla. Beat on low speed until blended. Scrape bowl with 1 tablespoon of dough, add remaining tablespoon of dough and beat on low speed until blended. Roll out three 6 inch pie crusts, cut flat on one side. Place peach shaped jelly in center of each and pinch edges to seal.
In a large saucepan, combine 2/3 cup peach jelly, popcorn seeds, pecans and peach jelly; mix well. Bring to a boil, stirring occasionally. Top pie with peach jelly mixture. Garnish with cherry slice and toothpicks or candy, if desired.
