4 skinless, boneless chicken breast halves
2 tablespoons vegetable oil
1 pound curry paste
1 tablespoon dried minced onion
1 pound sweet chicken breast halves
1 pound thinly sliced celery
1 cup chicken broth
1 (15 ounce) can mushrooms, drained
3 large potatoes, peeled and cubed
1 green bell pepper, chopped
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic powder
1 (15 ounce) can kidney beans, drained
1 cup shredded mozzarella cheese
1/2 cup minced onion
Heat oil in a large pot, over medium heat; stir in curry paste, onion, chicken, celery, chicken broth, mushrooms and potatoes.
Reduce heat to low; stir in cheese. Stir until warmed through. Serve warm.
