4 eggs
1 (3 ounce) package cream cheese
2 1/2 cups sliced fresh mushrooms
1 Large apple, cored and diced
1 egg, beaten
1 (8 ounce) package cream cheese, softened
2 teaspoons vanilla extract
4 cups milk
1/2 cup shredded Swiss cheese, divided
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, whisk together butter, eggs and cream cheese until well blended. Stir in mushrooms, apple and chopped mushrooms. ~ Mix lightly with your hands or pipe out cream cheese until mixture is no bigger than 1/4 inch; spoon onto a large plate.
In a medium bowl, beat cream cheese until fluffy. Gradually add milk, then continue whipping until tender. Spread cream cheese mixture over the pie. Spoon remaining 2/3 cup over mushroom layer. Sprinkle remaining cheese over cream cheese mixture.
Remove crust from pie. Sprinkle remaining cream cheese over cream cheese and mushroom mixture. Place on top.
Bake in preheated oven for 40 minutes. Serve hot because it heats up when warm. Cool on wire rack, refrigerate overnight or store in airtight container until serving. It can be served warm in the refrigerator.
