1/2 cup vegetable oil
1/2 cup fresh lemon juice
1/3 cup sugar
2 tablespoons lemon zest
3 1/2 cups milk
4 tablespoons cocoa powder
1 teaspoon peppermint extract
1 teaspoon distilled white vinegar
In a heatproof bowl, boil oil and lemon juice until thick. Stir in sugar, lemon zest, milk, cocoa, peppermint and vinegar. Mix thoroughly. Serve hot or cold.
