1 cup flaked coconut
6 (3 ounce) packages strawberry flavored Jell-O mix
2 tablespoons orange zest
4 eggs
2 tablespoons vegetable oil
jarred pepperoni, if desired
freshly chopped pecans
In a small bowl, blend coconut and jelly.
In a medium saucepan, heat concentrated orange juice over medium heat until liquid is nearly boiling. Boil coconut mixture for 3 minutes, stirring constantly. Remove from heat, and stir in pineapple. Stir in eggs, oil, and
