6 (2 ounce) packages frozen chopped spinach
1 pound ground beef
1 onion, diced
8 cups water
6 ounces shredded Cheddar cheese
1 cup sliced green onions
2 eggs, beaten
2 teaspoons dry mustard
2 cups water
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
In a large pot over medium-low heat, combine the spinach, mineral oil, salt, Worcestershire sauce and mayonnaise. Cover and reduce heat to low. Simmer for 35 minutes.
Stir the cooked beef, onion, water, cheese, green onions, eggs, mustard and water into the pot. Cover, reduce heat to low, simmer for about 15 minutes, stirring occasionally.
Reduce heat to low and simmer for 5 minutes, stirring occasionally, until mixture thickens.
