1/2 cup white sugar
1/2 cup shortening
6 tablespoons cornstarch
2 eggs, beaten
1 1/2 tablespoons milk
3 teaspoons baking soda
1 teaspoon lemon juice
Preheat oven to 425 degrees F (220 degrees C).
In a medium bowl, cream together sugar and shortening. Beat until smooth. Beat in eggs, one at a time, one tablespoon at a time. Combine the shortening mixture with the cornstarch, eggs and milk; stir well just until combined. Stir in the baking soda and lemon juice. Gently fold in the dough. On a lightly floured surface, roll out the dough to 1/4 inch in thickness. Cut into 1 ½ inch cubes. Roll the dough into ball bearings. Roll the balls out in parallel pieces and cut in half lengthwise to make 8 or 10 circles. Place 3 or more circles, one on each side of a 8 inch beauty dish.
Bake for 42 to 47 minutes or until golden and cored of surface. Remove from baking sheets to cool on wire racks.
