1 (1 ounce) package vanilla pudding mix
1/4 cup dark rum
1 (20 ounce) can sliced ripe bananas
1/4 cup nonfat milk
1/2 teaspoon baking soda
3 3/4 cups chopped pecans
In a large saucepan, mix pudding mix, rum, bananas, milk and baking soda. Bring to a boil, stirring constantly. Reduce heat, and simmer for 25 minutes. Pour over a greased baking sheet.
Bake uncovered in preheated 350 degrees F (175 degrees C) for 25 minutes. Remove from heat, and spread out on a dish. Chill before slicing. Serve chilled, or cool with vanilla pudding.
