1 cup butter
2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1 cup packed light brown sugar
1 egg
1 small lemon, divided
2 teaspoons vanilla extract
3 teaspoons citrus zest
3 eggs
3 tablespoons milk
1 tablespoon unsalted butter
1 cup apple juice
1 teaspoon vanilla extract
Preheat the oven to 400 degrees F (200 degrees C). Lightly grease cookie sheets.
Bake cookies 1 hour in the preheated oven, or until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Press chocolate frosting into the center of each cookie and remove flake.
