1/2 cup brown sugar
2 1/2 tablespoons butter
1 1/2 teaspoons vanilla extract
1 1/2 cups pumpkin puree
1 1/2 tablespoons lemon juice
1 (10 ounce) container frozen whipped topping, thawed
1 (10 ounce) package instant vanilla pudding mix
1 (15 ounce) container frozen whipped topping, thawed
Preheat oven on broiler setting. Grease and flour two 8 inch round pans.
Sift together the brown sugar, butter and vanilla. Set aside.
Beat the pumpkin puree in a medium bowl until smooth. Mix in the lemon juice. Mix in the pumpkin puree mixture. Stir in the lemon juice and 1/2 cup whipped topping.
Place pie crusts in pans, and place on broiler rack.
Broil until bubbles begin to appear, about 8 minutes. Serve hot or cold.
