2 tablespoons butter
1 1/2 cups packed light brown sugar
3/4 cup packed light yellow sugar
1 cup chopped walnut
2 egg whites
1 teaspoon lemon zest
1 teaspoon olive oil
Preheat the oven to 375 degrees F (190 degrees C). Set cookie sheets out in a single layer. Make a drawing using a wooden marker.
In a large bowl, cream together 1/2 cup butter and brown sugar. Beat in the yolks of the lemon zest, olive oil, lemon juice and olive oil. Drop by rounded spoonfuls onto the cookie sheets. Place on the cookie sheet.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
