2 tablespoons olive oil
1 medium onion, cut into 1/4 inch slices
2 cloves garlic, minced
3 large carrots, cut into 1 inch pieces
3 medium red potatoes, peeled and cubed

2 medium carrots, cut into 1 inch pieces
1 medium onion, cut into 1/4 inch slices
1 teaspoon salt
1/8 teaspoon ground black pepper
3 slices smoked salmon
Place olive oil in a small saucepan over medium heat and add onion and garlic. Saute until tender.
Add carrots, potatoes, carrots, and onions; cook, stirring, for 3 minutes. Add salt, pepper, and salmon. Cook, stirring, for 3 minutes.
Return to a low heat, and continue to cook for 1 minute to ensure a tight finish. Serve with fish.
