2 cups all-purpose flour
1 teaspoon baking soda
1 cup white sugar
1/2 teaspoon baking powder
3 eggs, beaten
1 teaspoon margarine
1 cup vegetable oil
1 cup chopped pecans
1 (20 ounce) can sweetened applesauce
1 cup milk
1 teaspoon vanilla extract
1 (14 ounce) can crushed pineapple, drained
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 large loaf pans.
In a large bowl, stir together flour, baking soda, sugar, baking powder and eggs. Stir in margarine, oil and pecans.
Divide batter evenly between the two pan. Sprinkle 1/3 of mixture into loaf pan. Cover with remaining batter.
Bake in preheated oven for 30 to 35 minutes, or until a wooden toothpick inserted into center of the loaf comes out clean. Cool loaf in pan on a wire rack after 15 minutes, then remove loaf from pan. Cool completely. Frost with whipped cream, pineapple jam, pineapple cherry pie filling, pineapple toothpicks or whipped cream.
