1 cup butter (unsalted)
2 eggs
2 cups milk
2 tablespoons lemon juice
2 teaspoons lemon zest
1/2 teaspoon vanilla extract
Preheat the oven to 375 degrees F (190 degrees C).
In a mixing bowl, cream together the butter or margarine and 2 eggs until smooth. Stir in the milk, lemon juice, lemon zest, vanilla and flour. Mix until well blended. Spread the mixture evenly into the bottom of a 9x13 inch pan. Dust finished 12 uni-shaped baking dishes with cornmeal.
Bake in preheated oven for 20 to 30 minutes, or until center is light brown.
