1 cup olive oil
2 cups diced carrots
2 cups chopped and dried onion
4 cups pumpkin
1 cup water
1 cup salt
5 tablespoons ground black pepper
5 small basil dashes
3 whole cloves
dried sage
1 1/2 teaspoons Cajun hot sauce
3 teaspoons white sugar
6 garlic, peeled, smashed
2 bay leaves
1 hing and dry mustard
ground black pepper to taste
3 tablespoons curry powder
salt to taste
Combine oil, carrots, onion, pumpkin, water, salt, black pepper, cloves, sage, Cajun hot sauce, 3 teaspoons sugar, garlic, bay leaves and mustard in a medium saucepan, and bring to a boil. Reduce heat to low and simmer, stirring occasionally for 2 to 4 hours.
To Garnish: Fine salt leaves from a toothpicks, and several coarse black cherries.
