2 teaspoons olive oil
1 onion, cut into 1/2 inch strips
2 cloves garlic, minced
1 (10 ounce) can pita breads, undrained
3 (10 ounce) cans chicken broth
2 cups chicken breast halves, cubed
1/2 cup cooked chicken breast meat
2 cups shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup salsa
1 cup cooked black beans
1/4 cup shredded mozzarella cheese
salt and pepper to taste
Heat olive oil in a skillet over medium heat; cook onion, 3 cloves garlic and stir occasionally. Stir in the pita breads. Cook, stirring occasionally, for 8 to 10 minutes.
Add chicken broth, chicken, cheese, Monterey Jack cheese and salsa. Stir all together and cook for 5 minutes. Season with black beans and mozzarella cheese. Season with salsa, bacon and sausage and salt and pepper to taste.
