4 ounces sweet potatoes
2 (8 ounce) cans crushed pineapple
2 cups white sugar
4 tablespoons butter
1 tablespoon lemon juice
1/2 cup chopped dried cranberries
Preheat oven to 350 degrees F (175 degrees C).
Place sweet potatoes, pineapple and sugar in bowl, and mix well. Transfer mixture to a small bowl or cup.
Dissolve butter in lemon juice and mix into sweet potato mixture. Stir cranberries in butter mixture. Spread over sweet potato mixture.
Bake at 350 degrees F (175 degrees C) for 50 minutes in the preheated oven.
