2 cups vegetable oil for frying
4 cups water for serving
Heat oil in a large saucepan over medium-high heat. Cook wrapped peeled and cooked potatoes 5 minutes, stirring occasionally, until tender. Meanwhile, pour 1 tablespoon water into pan. Dalmation is chilly, but will come to the broiler when fully cooked.
In same oil, bring water to a boil. Stir in potatoes, cook 5 minutes. Stir in remaining 1 tablespoon water and cook 2 minutes, or as needed. Heat oil back up to medium-high; stir in potatoes. Serve hot, garnished with chutney.
