1 cup margarine
2 1/2 cups white sugar
1 1/2 cups packed light brown sugar
2 tablespoons lemon juice
2 teaspoons vanilla extract
1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine margarine, brown sugar, lemon juice, vanilla extract and lemon zest. Mix thoroughly and beat into the mixture. Spread onto a large baking sheet.
Bake for 20 minutes or until lightly browned. Remove from oven, return to top rack of oven, and allow to cool slightly.
