2 tablespoons olive oil
1/4 cup chopped onion
1/8 teaspoon garlic powder
3/4 cup chopped green bell pepper
1/2 pound salted shrimp - peeled, deveined and chopped
2 tablespoons minced shallots
1 (6 ounce) can sliced mushrooms or green chile peppers, with liquid
1 pound caviar, sliced
Heat oil in a large frying pan and saute the onion and garlic in olive oil until golden. Stir in green pepper, shallots, ground pork and shrimp. Cook over high heat 3 minutes, stirring well. Reduce heat to medium and cook 3 minutes to just begin to brown on all sides.
Slowly turn the makings of this mixture into a gravy meringue, stirring frequently. Transfer this mixture to a medium saucepan and continue steaming for 5 minutes. Blend the caviar with mushrooms and begin to add through the slotted spoon. Arrange on a large fluid dish. Serve it hot or cold.
