3 red bell peppers, seeded and thinly sliced
1/2 pound sliced cucumbers
1 green bell pepper, seeded and thinly sliced
1 pound red onion, sliced
1/2 cup white wine
1 pound poblano chile peppers, seeded and chopped
1 (16 ounce) package poblano chile pepper rings
In a large bowl, mix the red pepper, cucumber, bell pepper, red onion, and white wine. Mix well and spread mixture over tomato rolls.
Preheat oven to 350 degrees F (175 degrees C). Spread additional slices of red pepper mixture around and layer with green pepper, chile peppers, and poblano peppers.
Bake in preheated oven for 30 to 45 minutes.
