1 (3 ounce) package cream cheese
1 (3 ounce) package lemon flavored Jell-O mix
2 eggs
3/4 teaspoon lemon zest
3 cups boiling water
2 cups frozen lemonade concentrate
1 (19 ounce) can sliced peaches, drained
1 cup boiling water
1 (10 ounce) package instant vanilla pudding mix
In a mixing bowl, mix the cream cheese, lemon flavored gelatin and eggs. Stir in 1 cup boiling water and 1 cup lemonade concentrate. Stir until well blended. Pour the mixture into the bottom of a 9 inch pie pan. Chill at least 4 hours before serving.
