Eggnog Brandy Cake Recipe

Ingredients

1 cup brandy

1 cup white sugar

1 teaspoon vanilla extract

2 eggs

1 teaspoon vegetable oil

1/2 cup milk

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.

In a heavy saucepan bring 2 cups brandy and 2 cups sugar to a boil. Boil 2 minutes, whisking constantly. Remove from heat. Beat in 1 tablespoon of vanilla extract.

Beat egg whites into the saucepan through the whisk. Make a well in the center and add the flour, baking powder, baking soda, salt. Mix together. Pour into prepared pans.

Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
