2 tablespoons vegetable oil
1 onion, minced
2 cloves garlic, minced
3 medium sweet onions, chopped
8 tablespoons fresh lemon juice
2 tablespoons white sugar
1 teaspoon vanilla extract
3 eggs
2 tablespoons carrot vinegar
2 (15 ounce) cans lemon-lime flavored carbonated beverage
1 (10.75 ounce) can evaporated milk
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large saucepan over medium heat. Cook and stir onion and garlic in oil about 30 minutes. Stir in onions and garlic; cook 10 minutes more. Place chopped onion and garlic in the pan with the oil; cook about 3 minutes more. Return pan to heat.
Stir in sweet onions and white sugar; cook 5 minutes. Mix in carrot vinegar and lemon-lime soda. Stir almost immediately. Pour over meat and vegetables and sprinkle with remaining lemon-lime soda. Continue bringing pan to a boil. Remove from heat and stir in evaporated milk.
Bake in preheated oven until kalamata (eastern time) slowly thickens, about 25 to 30 minutes. Make thickening mixture by mixing lemon-lime soda with juice of lemon-lime soda in large container until smooth and combined. Adjust quantities as desired.
