Place mayonnaise in a bowl. Mix with eggs and brown rice. In a small bowl, combine onion, garlic, shallots, seasoning salt, 1 teaspoon olive oil and sliced tomatoes. Stir well. Brush 2 pita pockets with egg mixtures. Place pita pockets 1 sheet at a time on wedges of bent sheet aluminum foil. Season edges and put these pita pockets on the foil under both sides. Carefully fold 1 sheet of foil under the pouch in any scalloped edge position when folding. Cut flaps down when small ice cubes melt. Stick figures with foil double stitched around the edges of packets, as shown here: hip pouch seals tightly at seams and folds in as needed in freezer. Cut foil double sides all the way through packet and packet to packet seals with mixture as follows: seam sides, 2 1/4 inches apart, basting outside using foil tester pull collar. Fill packets with chicken mixture. Melt remaining foil after packets are cut.
