6 slices bacon
8 onions, heated and sliced
2 carrots, diced
2 large mushrooms, diced
1 pound soft-cooked eggs
4 cups water
1 cup sour cream
1 1/3 stalks celery, grated
salt and pepper to taste
Heat a large skillet with large, deep fry pan. Cook bacon until lightly browned. Reduce heat to medium-low and add onions, carrots, mushrooms, and eggs. Heat for about five minutes, stir in water and add cheese. Simmer for 10 minutes, adding water until cheese thickens, and then simmer until vegetables are tender.
Meanwhile, in a large saucepan over medium heat, stir in sour cream and celery. Reduce heat to low and cook 5 minutes, stirring often. Continue cooking until broccoli is soft, about 5 minutes.
