3 tablespoons olive oil
1 onion, thinly sliced
1 celery, thinly sliced
2 carrots, thinly sliced
2 jalapeno peppers, seeded and sliced
1/2 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon pepper, or to taste
In a large bowl, mix olive oil, onion, celery, carrots, jalapeno peppers, parsley, oregano, basil, salt, pepper. Shape mixture into a 2 inch cube. Cover and refrigerate 1 hour, turning again after 1 hour. Serve chilled.
