2 teaspoons baking powder
2 teaspoons baking soda
1 1/4 teaspoons lemon zest
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
2 cups miniature marshmallows
1 cup butter or margarine
1 teaspoon cinnamon
1 cup white sugar
1 1/2 cups all-purpose flour
1 cup cinnamon-flavored baking mix
1 cup butter or margarine
1 1/2 cups white sugar
1 cup water
1 tablespoon lemon juice
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, sift together the flour, baking powder, baking soda and lemon zest. Make a well in the center and pour in brown sugar, egg, vanilla, marshmallows, butter or margarine, lemon juice and cinnamon. Beat on low speed until blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.
