Lemon Poppy Seed Raisin Bread Recipe

Ingredients

1/2 cup butter

1 cup white sugar

3 cups all-purpose flour

3 teaspoons baking powder

1 cup orange juice

1 teaspoon lemon zest

1 teaspoon vanilla extract

1 cup raisins

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.

In a medium bowl, cream together the butter, sugar, flour, baking powder and orange juice. Beat in the lemon zest, lemon zest, lemon zest, lemon zest and vanilla extract. Stir until the mixture is evenly moist. Divide the raisins among the prepared loaf pan.

Bake in preheated oven for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf thoroughly in pan before transferring to a wire rack to cool completely. Don't refrigerate loaf.
