1 lemon zest
1 cup uncooked white rice
1/2 cup chopped onion
1 cup chopped zucchini
1 tablespoon olive oil
1 (12 ounce) can sherry vinegar
1 (6 ounce) can tomato paste
1 cup chopped fresh apples
In a medium pot over medium heat, combine lemon zest, rice, onion, yogurt, olive oil, vinegar and tomato paste. Boil 15 minutes. Stirring frequently, cook, stirring occasionally until heated through. Heat through.
