Carrot Cake II Recipe

Ingredients

3 cups white sugar

2 tablespoons vegetable oil

2 eggs

1 teaspoon vanilla extract

1/2 cup corn syrup

1 teaspoon vanilla extract

3 cups chopped carrots

1/4 cup chopped celery

1 teaspoon salt

2 1/4 cups vegetable oil

1 1/2 cups vegetable oil

1 cup raisins

1 cup chopped walnuts

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch round pans.

In a large bowl, combine sugar, oil and eggs. Beat at medium speed until blended. Fold in vanilla and corn syrup. Beat at medium speed until mixture is smooth. Stir in banana, celery, salt, oil, raisins and nuts. Pour mixture into prepared pans.

Bake in the preheated oven for 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pans.
