1 cup butter
2 potatoes, peeled and cubed
2 tablespoons lemon juice
2 cloves garlic, minced
1 (16 ounce) container flour tortillas or burritos (if using)
2 tablespoons shredded Cheddar cheese
Preheat the broiler.
In a large bowl, mix together butter, potatoes and lemon juice. Stir in garlic and cook over medium heat until butter and potatoes are almost cooked. Stir in flour tortillas or burritos. Set aside.
Heat the butter on medium heat in a large skillet or frying pan over medium heat.
Stir the chicken into the skillet or pan with the lemon juice and mix well. Fry about 10 minutes. Add the chicken and cook for about 5 minutes, stirring frequently. Add the flour tortillas and cheese. Mix together quickly, adding as needed.
With a slotted spoon, spoon sauce into each pastry layer, using about one slice for each. Cover edges evenly and refrigerate 1 hour.
4 hours into cooking, broil or flip and reserve.
