2 large potatoes, peeled and cubed
1 lemon, juiced
1 red onion, julienned
1 cup sliced green olives
Bring a large pot of salted water to a boil. Add potatoes and stir gently until coated with liquid. Reduce heat to medium and cook until tender but still firm, about 15 minutes.
Stir lemon juice into boiling water, stirring to dissolve. Cover and simmer for 30 minutes. Remove from heat. Serve with frozen green and red olives.
