1 (8 ounce) package cream cheese, softened
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
2 eggs
1/2 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
3/4 teaspoon dried parsley
1 cup finely chopped onion
6 sprigs fresh mint, halved
In a large bowl, blend the cream cheese, Cheddar cheese, Monterey Jack cheese, eggs, salt, oregano, basil, parsley and onion. Mix with a wooden spoon. Place on a large serving platter and chill in the refrigerator overnight.
