1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 (3 ounce) package instant vanilla pudding mix
1 cup butter, softened
1 teaspoon vanilla extract
1 cup finely chopped pitted dates
1/4 cup fresh strawberries
1/2 cup lemon juice
1 teaspoon lemon zest
1/4 cup finely chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the cream cheese and pudding mix until smooth. Beat in the butter, then stir in the vanilla, pecans and dates. Spoon mixture into pie crust.
Bake in the preheated oven for 60 minutes, or until filling is bubbly in centers and a toothpick inserted into the center comes out clean. Cool and frost with lemon preserves.
