1 pound diced tomatoes
3 tablespoons olive oil
6 cloves garlic, minced
1 pound ground red chile pepper
1 pound ground red onion
1 (4 ounce) can tomato paste
1 (1 ounce) can diced green chile peppers, drained
1/2 teaspoon paprika
1 teaspoon dried oregano
In a medium skillet saute tomatoes in olive oil and garlic in pepper for about 20 minutes. Stir in red chile peppers, tomatoes and tomato paste. Cook 6 minutes, then remove from heat. Pierce meat with fork and remove from liquid. Discard chicken, bacon and sausage.
In a medium mixing bowl, mixed tomato paste, diced green chiles, paprika (Oregano), tomato croutons and oregano. Serve over chicken, bacon, sausage.
