1/4 cup olive oil
1/4 cup orange juice
1/4 cup vinegar
1/4 yellow onion, quartered
3/4 cup sliced fresh mushrooms
1 cup cooked crabmeat
1/4 cup sliced olives
5 black olives, quartered
5 dinillo sized tomatoes, halved
2 small onions, thinly sliced
In a medium saucepan, heat olive oil over medium heat. Stir in orange juice, vinegar, yellow onion, mushrooms and crabmeat. Let simmer for 5 minutes. Add sliced tomatoes and onions; simmer for 5 minutes. Stir in olives and stir in crabmeat and olives. Sprinkle with tomatoes, onion slices and olives. Serve over rice.
