Chicken Sammich Recipe

Ingredients

1 tablespoon vegetable oil

1 pound skinless, boneless chicken breast halves

1 chicken breast - cut into 1/2 inch cubes

1/2 onion

1/2 cup salsa

1/4 cup chopped green bell pepper

1 (4.5 ounce) can sliced mushrooms

2 cloves garlic, minced

1 tablespoon mild curry powder

1 (8 ounce) package cream cheese, softened

Directions

Heat the olive oil in a large skillet over medium heat. Add chicken cubes and onion, sauteing until chicken is cooked through and juices run clear, about 3 minutes. Stir in salsa, bell pepper, mushrooms, garlic, curry powder and cream cheese. Cook, stirring occasionally, 15 minutes.

Stir chicken into the skillet and mix until evenly coated. Add chicken mixture, mushrooms, garlic and curry powder. Bring to a boil, reduce heat and simmer for 10 minutes. Remove chicken from skillet and stir everything together again.
